Craving Italian? This veggie version will keep you satisfied.
Diet Type: Vegetarian
Ingredients:
  • Calzone Crust
  • 1 1/2 teaspoons dry yeast
  • 1 cup lukewarm water
  • 2 teaspoons honey
  • 1 1/2 teaspoons salt
  • 2 cups unbleached white flour with germ (and a bit extra for kneading)
  • 1 cup whole wheat bread flour
  • 1/4 cup cornmeal
  • 3 tablespoons olive oil
  • Zucchini Filling
  • 2 tablespoons olive oil
  • 2 cups minced onion
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 1/2 pounds zucchini (about 5 medium) cut into small pieces
  • 1 bag Boca crumbles thawed
  • 4 medium cloves garlic, minced
  • 8 oz grated dairy or soy cheese (mozz or cheddar work well)
  • Serves: 8
    Cooking Time: Over one hour
    Instructions:
    Crust:Combine yeast, water, and honey in a large bowl. Stir and let stand for 5 minutes. Beat in salt, flours, and cornmeal with a wooden spoon until too thick to mix then turn onto a floured surface and knead for about 5 minutes. Grease mixing bowl with olive oil. Return dough to bowl. Brush top surface with oil and let rise in a warm place for about one hour or until doubled in bulk. Preheat oven to 425. Oil a baking tray.

    Punch dough to deflate it and turn it our on to the floured surface. Divide dough into 6-8 equal parts, and knead each part into a ball. Roll each ball into a circle or oval about 1/4 inch thick. Place about 1/4 cup filling on one side and carefully stretch the other side of the dough over the filling. Crimp the edges firmly with the flat sied of a fork. Prick with fork a few timews and place on prepared tray. Bake 15 min. Cool for 10 min before eating.

    Filling: Saute ingredients on med heat to tender. Fill calzone,top w/ cheese. Fold,crimp,and bake as above.
